There's something magical about homemade treats, especially when they come with a healthy twist. Inspired by a dear friend, Laurel, these Homemade PB Cup Protein Bars are not only a delight for the taste buds but also a wholesome treat that your entire family will adore! 

Main Ingredients:

  • 1 cup nut flour (cashew or fine almond flour)

  • 1⁄2 cup vanilla protein powder

  • 1⁄3 cup peanut butter (plus a little extra for that creamy goodness)

  • 1 tsp vanilla extract

Topping Ingredients:

  • 1/3 cup dark chocolate chips

  • 1⁄2 tsp coconut oil

  • A couple of pinches of sea salt

Directions:

  • Line an 8x8 pan with parchment paper, ensuring easy removal once the bars are set.

  • In a mixing bowl, combine the nut flour, vanilla protein powder, peanut butter, and vanilla extract. Mix until a dough-like consistency forms.

  • Press the mixture firmly into the bottom of the lined pan, ensuring an even layer.

  • In a separate bowl, melt the dark chocolate chips and coconut oil together using a double boiler or microwave. If microwaving, use 50% power in 30-second intervals, stirring in-between until smooth and glossy.

  • Once melted, spread the chocolate mixture evenly over the protein bars, ensuring full coverage. Sprinkle it with sea salt for that perfect balance of sweet and salty.

  • Place the pan in the refrigerator for at least 30 minutes to allow the bars to set.

  • Once firm, remove from the fridge and cut into desired portions.

  • Store the bars in the refrigerator to maintain their freshness and enjoy whenever cravings strike!
